A couple of weekends ago, Paul cooked apples in coconut oil in a skillet - I'm now obsessed!!
So easy...throw some coconut oil in the skillet - looks like butter), place sliced apples, flip after 10 minutes, and let cook 5 minutes longer (or until soft). Use them as toppings to almond waffles (seen here)..or something new we've been trying - banana coconut pancakes (paleo recipes online).
